Hello my beautiful friends! I have finally found the perfect measurements for these delicious protein pancakes. I have been trying for a quit some time time to make a perfect recipe for these pancakes and I have finally made it. I was inspired by others bloggers like Niomi Smart, Fablunch, JessBeautician but this is my version so I hope you will like it.


Serves: 6-8 pancakes

1 cup of oats

3 tbsp. almond flour or any nut flour

1 tbsp. of veggie protein (or some other protein of your chose)

1 cup almond milk or any dairy free milk

1 tsp cinnamon

1 banana

Coconut oil to grease the skillet

Hand full of blueberries


Combine all ingredients (except blueberries) in a blender and blend for 30 seconds on high speed until everything is well combined. Heat a skillet on medium/high heat. When the skillet is heated, add 1 tsp of coconut oil and spread with a paper towel. Pour ¼ cup of the mixture into the skillet and cook for 2-3 minutes. When you see first bubbles forming add few blueberries, flip the pancake and cook for another 2 minutes. Continue cooking the rest of the pancakes the same way. Place the pancakes on top of each other and add your favourite toppings. I like using homemade hazelnut spread and homemade compote (you have a recipe for this compote in this post here)
